Finally the weather has been warm enough for us to start grilling again. We love to cook on the grill during the summer months not only because I love grilling but if I can cut back on turning the on the oven on a hot day, I’m all for it. I’ll never pass up a good grilling recipe and you’ll find us out there more often than not cooking lunch or dinner. These garlic cilantro lime chicken skewers are a family favorite that I typically cook on the grill at least twice a week. Chicken is one of my favorite things to grill because I know that it’s something the kids will eat and won’t turn their noses up at it.
Garlic Cilantro Lime Chicken Skewers {Recipe}
Fire up the grill and enjoy these flavorful Cilantro Lime Chicken Skewers.
Ingredients
- 2 lbs. Chicken Breast cute into 1 in. cubes
- 5 cloves of garlic
- Zest and juice of 1 lime
- 2 limes sliced
- 1/2 bunch of cilantro
- 2 1/2 tbsp. of honey
- 1/4 cup of olive oil
- salt & pepper to taste
- Wooden Skewers
Instructions
Step 1: Add cilantro, crushed garlic, lime zest, lime juice, honey, salt, pepper and olive oil to a blender. Add about half of the water to start. Blend until cilantro is chopped and everything is well blended (about 20-30 seconds). If needed at the rest of the water.
Step 2: Pour marinade in a large zipper seal bag and add cubed chicken. When you cut the chicken try to make sure the pieces are all the same size so they cook evenly. Place the chicken in the fridge for 1-2 hours.
Step 3: While chicken is marinading, soak your skewers in water.
Step 4: Once chicken is done marinating, place chicken pieces on a skewer alternating with a piece of lime every two or three pieces.
Step 5: Pre-heat grill to 350 degrees. Once grill is ready place your skewers and cook on each side 5-6 minutes or until chicken is cooked through.

these look amazing! we tried a similar recipe this past week, but this one looks even better. i just wish we had a real grill
